This salad turns any meal into a special occasion. Since you won’t be doing a lot of chopping and dicing, it’s easy and only takes a few minutes.

4 cups tightly packed mixed greens
1/2 cup sun dried tomatoes
1 cup coarsest chopped kalamata olives
1/2 cup crumbled feta
3/4 cup canned chickpeas, rinsed and drained
1-2 cup slivered red onion
1/2 cup balsamic vinaigrette dressing
Combine all ingredients except dressing in large bowl.
Add dressing just before serving; mix lightly.
Tips & Tricks
Pine nuts add a nutty flavor.

3. To store leafy greens before making your salad, sprinkle with water and store, loosely wrapped, in a plastic bag in the crisper drawer, or on the bottom shelf of the refrigerator.
